Chocolate Brownie with Vanilla Ice Cream

Imagine enjoying a sunset on the beach of a remote Island in the middle of the Pacific with a cocktail in one hand and a warm chocolate brownie in the other. Waterline Restaurant and Bar can make this imagination a reality.

Located off the main loop in Arorangi, Rarotonga in the Cook Islands, this seaside Restaurant and Bar offers a full cocktail menu with happy hour until sunset. Dinner service doesn’t start until after the sun tucks behind the horizon but they offer the ability to order dessert to accompany your happy hour drinks.

I chose the Warm Chocolate Brownie with vanilla ice cream to pair with my mint mojito. The brownie was a nice consistency, warm with melted chocolate bits throughout. The vanilla ice cream melted pleasantly with the warm chocolate sauce and raspberry drizzle. I can’t imagine enjoying a sunset any other way. The staff of Waterline was incredibly hospitable and even offered to bake me a chocolate cake for another day. I would recommend this dessert treat for anyone looking to sweeten up their sunsets on the island.
